Prepares all fish, meat and poultry items for the departments’ requirements in accordance with the laid down procedures and standards.
- Communicates with the chef to determine daily, weekly, and monthly meat consumption needs.
- Places daily orders from the store according to the menu.
- Inspects all fish, meat, and poultry upon receipt; rejects any items not meeting required standards.
- Butchers and prepares all fish, meat, and poultry in accordance with specified standards.
- Maintains high standards of sanitation and hygiene at all times within the preparation area.
- Ensures all prepared items meet specified quantity and quality, are ready at required times, and minimizes wastage.
- Wraps, labels, dates, and stores all prepared items correctly.
- Operates all equipment safely and reports any defects or safety hazards.
- Observes good personal hygiene practices at all times.
- Undertakes any other duties as requested.
