Role Purpose
The Pastry Artist will be responsible for developing, implementing, and adhering to all culinary standards, practices, recipes, training & development for the culinary complexes at Al Hamra.
Role Responsibilities
- Manages and assists the Sous Chef Pastry and culinary team within the operation to ensure issues and areas of concern are resolved within agreed timelines and efficiency.
- Accountable for coordination of HACCP audits and closure of audit findings within timelines including monthly reviews of HACCP training programs.
- Ambassador of Seven purpose and Mission confident awareness of Seven Handbook.
- Supports the Pastry team and the Sous Chef Pastry, through all phases of Change Management.
- Works with internal stakeholders to cascade any relevant programs or initiatives which may impact the overall experience of each site or portfolio’s performance.
- Establishes key working relations with immediate support services like P&C developing logistics while linking food products and requirements for portfolio dishes, development, and execution.
- Assists the Pastry team with operational onboarding food recipe manuals and induction folders to achieve smooth pre-openings, continued learnings and consistency of colleague’s knowledge and skills with Portfolio Executive Chef.
- Reviews all relevant kitchen design in SD & DD, optimizing flows, process, and functionality of the proposed BOH requirements including waste management.
Qualifications
