الوصف الوظيفيEnsure accurate recipe costing and menu item linking in the system and review it on a periodic basis Verify recipes, check for actual consumption vs the recipe defined in SAP Perform yield test of top-selling recipe portions in comparison to approved recipes for all the branches on a regular basis to make sure that the standard portions are followed Conduct variance analysis and rectifications, identify the ingredient level inventory variance, and highlight solutions to the operations as a part of inventory reconciliation Coordinate with R&I for any new menu update requests, and verify the new recipes Agree on all prices on supplier invoices, purchase requisitions, or the master price list from the accounts department Liaise with branches for ordering sheets and other ad hoc requirements Monitor the price fluctuation every week and prepare and share the COGS impact weekly Verification of weekly transfer report against the issue request from outlet and circulate to branches for confirmation Escalate any regular cash purchase on certain items that have a regular supply Monitor timely posting of all branch transfers Investigate, document stock variance, and take corrective actions Support annual budget activity for the COGS budget Support in FP&A activity by providing timely input and action plan Associate Full-time Finance and Accounting / Auditing Industries : Food & Beverages
Responsibilities
- Maintain a system of financial internal controls
- Monitor and analyze branch and brand-level F&B cost reports
- Analyze COGS variance from Theo’s cost to the actual and the reason for the variance
- Ensure all allocations are adjusted in the COGS reports (Warehouse, Write Off, Central Kitchen, Credit note)
- Monitor and review spoilage, wastage, and usage on a daily basis
- Prepare ad hoc reports as requested by management and provide the required support to the operations for smooth functioning
- Monitor costs, compare them to the budget, and take note of variances
