Financial Returns
- Initiate daily requisitions based on business, banquets, and occupancy, minimizing wastage and monitoring storage and food costs.
- Take measures to minimize wastage and spoilage.
- Ensure all food is properly documented and only given to authorized persons, reporting irregularities immediately.
People
Provide direction to Demi Chef de Partie, Commis, and Kitchen Stewards.Maintain hygiene, sanitation, and safety standards.Build good relationships within the F&B production, service, and stewarding teams.Guest Experience
Maintain high cleanliness standards within the section, ensuring it is hygienic and organized for food production.Oversee standards of food quality and presentation.Prepare, cook, and dress all cold / hot foods, including à la carte orders, buffet, banquet, and outside catering, ensuring freshness and adherence to standards.Responsible Business
Cook and present menu items according to recipes and standards.Follow FIFO procedures and monitor proper storage of food and beverages.Ensure equipment, stores, and work areas are operational and cleaned regularly.Accountability
Maintain high service standards to uphold the hotel's image and provide star-class service as a Chef De Partie.Supervise Demi Chef de Partie, Commis 1, and Commis 2.Qualifications and Requirements
