Overview The Groves is a dynamic, upscale restaurant venue featuring multiple restaurants with diverse flavours, focused on delivering exceptional experiences.
Responsibilities
Assist in the preparation and cooking of hot dishes, including meats, poultry, seafood, vegetables, and sauces.
Follow standardized recipes and instructions from senior chefs to ensure consistency and quality.
Support the execution of grill, sauté, and oven-prepared items during service.
Ensure proper plate presentation and temperature before food leaves the hot pass.
Prepare ingredients and components for daily service (e.g., chopping, marinating, portioning).
Label, store, and rotate mise en place according to food safety standards.
Maintain a clean, organized workstation at all times.
Hot Line Operations : assist in the preparation and cooking of hot dishes, follow recipes, support grill / sauté / oven items, and ensure presentation and temperature before serving.
Mise En Place & Prep : prepare ingredients, label and rotate mise en place, maintain sanitation.
Team Support & Communication : collaborate with the Chef de Partie and other sections; communicate shortages or delays; assist other sections as needed.
Hygiene, Safety & Equipment Care : maintain hygiene standards, clean and sanitize equipment, report faults.
Inventory & Portion Control : use ingredients efficiently, assist with stock rotation, ensure correct portions for cost control.
Requirements
Experience : Minimum 1-2 years in a professional kitchen, preferably in a hot kitchen or line cook role.
Experience in Japanese and Chinese cuisine is preferred.
Skills & Knowledge :
Basic knowledge of hot kitchen techniques (grilling, sautéing, roasting, etc.).
Understanding of kitchen hygiene and food safety protocols.
Knife skills and mise en place practices.
Ability to take direction and learn quickly in a fast-paced environment.
Attention to detail and commitment to quality and consistency.
