Job Description (Role & Responsibilities)
Receive, inspect, clean, gut, scale, and cut fish and seafood according to customer needs.
Arrange and display fish / seafood in the chiller / ice counter to maintain freshness and attractive presentation.
Ensure all fish is kept at proper temperature and stored following hygiene and food safety standards.
Assist customers by providing product information, cutting and cleaning based on preference.
Monitor product freshness, expiry, and remove spoiled / damaged items.
Maintain cleanliness of working area, tools, knives, cutting boards, ice bed, and display counters.
Track daily stock levels, update sales and wastage reports, and inform supervisors for replenishment.
Follow FIFO / FEFO methods for seafood stock rotation.
Receive deliveries, check quality and quantity against purchase orders.
Compliance with HACCP, health inspection guidelines, and company food safety policies.
Requirements
Qualifications & Requirements
Education & Experience
High school qualification or equivalent.
1–3 years of experience as a Fish Monger / Seafood Handler (hypermarket, supermarket, fish market, or hotel butchery).
Knowledge of handling fresh, frozen, shellfish, and crustaceans.
Technical Skills
Skilled in cutting, filleting, skinning, deboning, and portioning different types of fish.
Knowledge of seafood species, freshness indicators, and storage temperature.
Familiar with weighing scales, knives, sharpening tools, and seafood cutting machines.
Basic knowledge of hygiene standards, HACCP & food handling procedures.
Ability to use POS, stock sheet or barcode labelling devices (advantage).
Physical & Personal Skills
Good physical stamina to work in chilled conditions and stand for long hours.
Strong attention to hygiene, cleanliness, and customer service.
Ability to lift and carry seafood boxes or ice trays.
Honest, responsible, punctual, and able to work early mornings or shifts / weekends.
