Job descriptionشهادة مهنية أو دبلوم في فنون المخبوزات أو الطهي. خبرة لا تقل عن 5 سنوات في مجال المخبوزات الغربية داخل مخابز احترافية أو فنادق راقية. معرفة متقدمة بتقنيات العجائن، التخمير الطبيعي (Sourdough)، درجات الحرارة، وأوقات الخَبز. مهارات عالية في التنظيم ودقة العمل تحت الضغط. قدرة على إدارة الفريق وتحفيز العاملين. ذوق عالٍ وشغف بالمخبوزات الأوروبية. انضباط في الوقت والالتزام بالمعايير. روح قيادية وتعاون مع الفريق. اهتمام بالتفاصيل وجودة المنتج النهائي.

شيف مخبوزات غربية (Western Bakery Chef)
الهدف من الوظيفة :
الإشراف الكامل على إنتاج المخبوزات الغربية (كرواسون ومشتقاته، شباتا، بانيني، فوكاشا، ساوردو) وضمان جودة المنتجات واتساقها وفق معايير العلامة التجارية، مع تطوير وصفات جديدة وتحسين العمليات الإنتاجية بما يحقق أعلى مستويات الكفاءة والجودة.
المهام والمسؤوليات :
- إعداد وتنفيذ وصفات المخبوزات الغربية حسب معايير الشركة المعتمدة.
- الإشراف على تجهيز العجائن الخاصة بالكرواسون، الشباتا، البانيني، الفوكاشا، والساوردو.
- ضبط عمليات التخمير، التشكيل، الخَبز، والتبريد بما يضمن الجودة والطراوة المثالية للمنتجات.
- مراقبة جودة المواد الخام وضمان مطابقتها للمواصفات قبل الاستخدام.
- تحديد احتياجات القسم من المواد والمعدات والتنسيق مع إدارة الإنتاج أو المشتريات لتأمينها.
- تطبيق معايير النظافة والسلامة الغذائية (HACCP / ISO) داخل بيئة العمل.
- تدريب مساعدي الشيف والعاملين الجدد على طرق العمل الصحيحة والوصفات القياسية.
- المشاركة في تطوير منتجات جديدة بالتعاون مع قسم التطوير أو التسويق.
- مراقبة نسب الهدر وتحسين كفاءة التشغيل لتقليل التكلفة دون التأثير على الجودة.
