Sushi Chef (Production) We are seeking a skilled and passionate Sushi Chef (Production) to join our growing Japanese restaurant team. The ideal candidate has hands-on experience in sushi production within a high-volume restaurant or central kitchen and is committed to delivering consistent quality while maintaining the highest standards of food safety and hygiene. Key Responsibilities: Prepare sushi ingredients, including rice, seafood, vegetables, sauces, and garnishes according to company recipes and standards. Produce sushi rolls, nigiri, sashimi, and other menu items with consistency, accuracy, and attention to presentation. Ensure proper food handling, storage, labeling, and rotation following HACCP and food safety guidelines. Monitor ingredient quality and report any shortages or quality issues. Maintain cleanliness and organization of the production area, equipment, and utensils. Work efficiently in a fast-paced environment while meeting daily production targets. Support the kitchen team in maintaining smooth operations and continuous product quality. Requirements: Previous experience as a Sushi Chef or Sushi Production Chef in a Japanese restaurant or central kitchen. Good knowledge of sushi preparation techniques, knife skills, and food safety standards. Ability to follow standardized recipes and production procedures. Strong organizational skills, attention to detail, and ability to work under pressure. Positive attitude, reliability, punctuality, and a team-oriented mindset.
