Description :

The Chef de Partie is responsible for supervising and training the kitchen brigade in food preparation, cooking, and service across all sections of the kitchen. The role involves planning and coordinating daily routines in accordance with operational menus, maintaining high standards of hygiene and cleanliness, and ensuring food quality and presentation meet specified standards.

Key Responsibilities :

• Ensure all food produced meets quantity, quality, and timing requirements.
• Manage staff reporting, leave, and break times to ensure adequate coverage.
• Maintain cleanliness and hygiene standards in all kitchen areas.
• Monitor kitchen security.
• Assist in supervising food preparation, cooking, and service according to procedures.
• Contribute to the development of standardized recipes and menu items.
• Check the quality and presentation of all dishes before service.
• Allocate tasks effectively among staff.
• Ensure all orders are fulfilled as required.
• Operate equipment safely and report any defects or hazards.
• Supervise and assist cooks to ensure efficient kitchen operations.
• Ensure cleanliness of equipment, utensils, and work surfaces.
• Assist in preparing staff rotas and work schedules, ensuring adherence.
• Promote good personal hygiene among staff.
• Follow safety procedures to ensure kitchen safety.
• Control food costs by minimizing wastage and maintaining portion control.
• Perform other duties as assigned.

The Lead Chef will also assist in preparing dishes for special events such as symposia and functions. Maintaining personal hygiene and proper uniform dress code is essential, along with implementing these practices in the kitchen environment.
