JOB SUMMARY Accountable for the overall success of daily pastry operations. Demonstrates creative baking and decorating skills by personally performing tasks and leading staff in preparing quality, consistent pastries across all areas. Focuses on improving guest and employee satisfaction while managing the operating budget. Supervises all pastry areas to ensure high-quality products. Responsible for guiding and developing staff, including direct reports, and maintaining sanitation and food standards. Responsible areas include overseeing all pastry food preparation areas. CANDIDATE PROFILE Education and Experience High school diploma or GED; 4 years of experience in culinary, food and beverage, or a related professional area. Or a 2-year degree from an accredited institution in Culinary Arts, Hotel and Restaurant Management, or related field, with 2 years of relevant experience. CORE WORK ACTIVITIES Leading the Discipline Teams Supervise and manage staff; understand employee roles sufficiently to perform duties in their absence. Coordinate activities of cooks and pastry preparation staff. Use interpersonal skills to lead, influence, and motivate; promote sound financial and business decisions; demonstrate honesty and integrity; lead by example. Build mutual trust, respect, and cooperation among team members. Serve as a role model for appropriate behaviors. Maintain employee productivity levels. Supervise pastry shift operations. Communicate performance expectations clearly. Foster open, collaborative relationships with staff. Ensure ongoing communication to align team with business objectives, recognize performance, and achieve results. Lead shifts by personally preparing food and fulfilling requests as needed. Represent the property at media events as required. Conduct pastry classes for customers and community engagement. Ensuring Culinary Standards and Responsibilities are Met Develop and create new pastry ideas and items. Handle food properly, maintaining correct temperatures. Follow proper food handling and storage standards. Recognize high-quality products, presentation, and flavor. Ensure staff maintain required sanitation and food handling certifications. Ensure compliance with all relevant laws and regulations. Assist with pastry menu development. Operate and maintain department equipment, report malfunctions. Prepare and cook various foods, including special requests. Create decorative food displays and presentation. Ensuring Exceptional Customer Service Exceed customer service expectations. Manage daily operations to meet quality standards and customer expectations. Support staff in understanding guest needs, providing guidance and coaching. Set a positive example in guest relations. Empower employees to deliver excellent service. Handle guest complaints effectively. Gather guest feedback to improve product and service quality. Focus on guest satisfaction in team meetings and ongoing improvements. Maintaining Culinary Goals Set and support achievement of pastry-related goals, including performance and budget targets. Prioritize and organize daily pastry operations. Implement procedures for portion control and waste reduction. Manage inventory and supplies within budget. Train staff on safety procedures. Managing and Conducting Human Resource Activities Identify staff development needs; coach and mentor accordingly. Participate in staff training on menu items and ingredients. Administer policies fairly and consistently. Complete disciplinary procedures and documentation as per SOPs and LSOPs. Review staffing levels to meet service, operational, and financial needs. Utilize on-the-job training tools. Gather employee feedback and address concerns through an open-door policy. Additional Responsibilities Provide information to colleagues via phone, email, or in person. Analyze information to determine best solutions. Participate in relevant meetings.
